« La cuisine s'adapte, non seulement au lieu mais aussi à la clientèle. Chic et discrète, elle ne cherche pas l'exploit technique, mais le confort, des saveurs recherchées et familières à la fois. Aussi, sans s'éloigner tout à fait du terroir, peut-on croiser les Saint-Jacques et gambas au jus de viande truffée ou le coquelet caramélisé au citron et gingembre, tout en appréciant un omble chevalier vapeur sur un bouillon à la coriandre ou une raclette bien garnie.
