The " Farcement of Val d'Arly" receipt
For 8 people.
This is a typical local dish, composed of potatoes, prunes, dried raisins and lard. It is relatively unknown to holidaymakers, but we make it in our kitchens in a mould, which is one of the ways of preparing it. The other is in a frying pan.
- 15 big potatoes
- 4 eggs
- 125 gm of fresh cream
- 400 gm of stoned prunes
- 250 gm of dried raisins
- 20 slices of smoked belly pork
- 2 soup spoons of flour
- salt, pepper, muscade and butter
Take a suitable mould (farcement or kouglof), then plaster the inside with the slices of lard and butter the chimney stack. Peel, wash and grate the potatoes. Mix the prunes, raisins, eggs, cream and muscade, adding a little salt and pepper. Add the grated potatoes and pour the mixture into the mould. Cook in a ‘bain marie' for 4 hours.
Serve hot with meat, or with Savoyard sausage (diots) cooked in white wine, and accompany with a green salade.
